Super Simple Blueberry Galette

Whipping up our homemade blueberry galette is as easy as a summer breeze—you'll be baking it on a whim! This galette isn't just dessert; it's a taste of summer itself—simple, joyful, and effortlessly delicious. Ingredients:

  • 1 premade pie crust (store-bought or homemade)
  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • Zest of half a lemon
  • 1 egg, beaten (for egg wash)
  • Optional: coarse sugar for sprinkling

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Prepare the filling: In a bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, and lemon zest. Toss gently to coat the blueberries evenly.

  3. Roll out the pie crust: On a lightly floured surface, roll out the premade pie crust into a rough circle about 12 inches (30 cm) in diameter. Transfer the rolled-out crust to a parchment-lined baking sheet.

  4. Add the filling: Arrange the blueberry filling in the center of the pie crust, leaving about 2 inches (5 cm) of crust around the edges.

  5. Fold the edges: Gently fold the edges of the pie crust over the filling, overlapping slightly as you go around. Press gently to seal any cracks.

  6. Brush with egg wash: Brush the edges of the crust with the beaten egg. This will give the galette a beautiful golden color when baked.

  7. Bake: Place the baking sheet in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

  8. Cool and serve: Remove the galette from the oven and let it cool on the baking sheet for about 10 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

  9. Optional: Sprinkle the galette with coarse sugar for added texture and sweetness before serving.
